I had a great conversation with Steve McKenzie from “Bless My Bacon” Podcast. We talked about how my engineering background, my “old world” charcuterie lessons and experiences in Italy, and my commercial bacon-making process classes at Iowa State University’s Meat Lab have helped me develop the philosophy and knowledge needed to make Grandad’s Bacon the THE BEST DAMN BACON.
