A Message from Grandad

My name is Craig

Everyone loves bacon, but as I see it there is a broad spectrum of commercial bacon quality sold today, ranging from not very good to OK.  Commercial bacon could be so much more, but the companies that make it are too focused on minimizing cost and production time to make it better.  My mission is to make bacon that is so great that you’ll never want to eat any other kind of bacon again.  I understand that’s a bold statement, so let me explain how this is possible.  Great bacon requires:

·       Great meaty cuts.  I select bacon with the right ratio of lean to fat, and I cut my bacon thick, and in an easy to cook size.  I also offer two different bacon cuts—traditional American bacon and a more meaty British cut bacon.

·       Great flavors.  Grandad’s Bacon flavors reinvent what bacon can be.  The flavors aren’t just sprinkled on—they are marinated into the bacon.

·       Great ingredients.  I use pork from small farms and butchers that I know personally.  I do not add chemicals such as nitrites, nitrates, or preservatives.

·       Time and care.  I make bacon the old fashioned way.  I make bacon by hand in small batches, and this requires at least three weeks.  Most commercial bacons are cured, smoked, sliced, and packaged in about a day.
